They look amazing. Look at that, look how much chocolate it’s got on it.

There’s a really good one,now look at his big brother who’s trying to hide away.Look at that.That’s more like a chocolate potato.There must be about six Brazil buts inthere.

But for me that would be the best Christmastreat ever.

But,if you look at that chocolate, there’s something missing about it.

It hasn’t got that lovely sparkle and shine. That’s what it needs.

Right, I’ll fix that.

That gloss isn’t always down to the chocolate itself.

It can come from a kind of vanish called confectioner’s glaze.

Traditional confectioner’s glaze is madeout of this stuff, shellac.

But the killer fact is where it comes from.

Now,look at this branch from India. At first you think that’s bark. It’s not. It’s absolutely covered inshellac.

But it hasn’t been produced by the tree. It’scome from…these insects.

The lac bug sticks its eggs to the tree, and then to protect them, it produces a hard resin.

Once it’s cleaned up, it’s edible, and canbe turned into a liquid that gives some chocolate sweets their glossy coat.

I suppose it doesn’t seem very Christmassy, but it’s as natural as honey or milk.

So the final stage for my chocolate brazilsis to add the shellac.

Oh, smells lovely!

Let’s have a look at these beauties. They’reincredible, look at this! Look how smooth that is.

It’s not brilliantly shiny, you know, youcan’t see your face in it, but that’s not bad considering it’s come out of acement mixer.

Oh, wow. Look at the thickness of that chocolate.That’s made my Christmas.
