While it cooks, I'm making bitter melon with black bean sauce. 趁鹅在锅里炖,我做起了豆豉苦瓜 This is the great thing about cooking like this. 这就是像这样子做饭的乐趣 The family all chips in and helps you do the prep, which is great. 全家人都参与进来,帮你做好炒菜前的准备工作,这样很好 I love it. 我喜欢 This is bitter melon, it's quite delicious, 这个是苦瓜,非常好吃 and you can actually get this fresh everywhere now, 实际上现在苦瓜到处都有得卖 in Chinese supermarkets, and you need to take out the inside. 比如中国的各大超市,你需要把里面的籽去掉 It has a bitter flavour. 它吃起来是带苦味的 She likes it. 她喜欢吃苦瓜 But I'm cooking this because my mum used to make it often. 但是我做苦瓜是因为我妈妈以前常做 I used to walk into the door and I would hear the wok sizzle 我以前一进家门就能听到炒锅发出滋滋声 and I would hear all the food going into the wok, 听到食物入锅的声音 and so by the time I washed my hands and everything, the food would be on the table. 而等我洗完手做好一切的时候,菜已经摆上桌了 In a few hours, we are going to have a feast here. 几个小时以后,我们就可以享用大餐了 I'm making a full-flavoured black bean sauce, 我正在做个一个风味豆豉 which will go perfectly with the melon. 一会儿用它炒苦瓜,味道绝配 This is classic. Garlic, ginger and black beans. 蒜,姜,还有黑豆,这是经典搭配 I think this is the flavour that people who are outside of China, probably are the most familiar with. 我认为这个很可能是海外华人最熟悉的味道了 These are the famous black beans, that the world loves. 这个是全世界都喜欢吃的黑豆 We take vegetables and we blanch them, 我们先把苦瓜放锅里焯一遍 and it helps to give them a cleaner flavour. 这样能让它的口感更佳 Now I'm draining it. 接着沥干 Garlic, ginger and the black beans. 大蒜,姜还有黑豆 Then add spring onions, mild red chillies...and rice wine. 接着再放入葱,红辣椒,还有米酒 Next, add the bitter melon pieces and a splash of water to tenderise them. 接下来,倒入苦瓜,加一点儿水让它们更嫩 They need a bit more cooking. 还要再炒会儿 Just a little bit of sesame oil. 放进一点点芝麻油 Give it a nice sheen to that. 让菜色泽更好 My cousin is serving the goose in the traditional way, chopped. 我堂兄弟正在用传统方式处理鹅肉,把肉切块 Tell me if that's not beautiful. 如果不好吃告诉我 They're all having a little booze. 他们都喝了点酒
