'It's our second day in Yunnan Province,

That looks like some sort of vegetable. It's fiddlehead fern.

And I love it - chillies, like in Thailand. Garlic, chillies.

This is the most unusual breakfast I've had in China, so far.

This is supposed to be the birthplace of tea,

So I'm excited to try the pu-erh tea,

cos that's one of my favourite teas.

It's awfully² good for you, it's very cleansing³,

and it helps to lower cholesterol⁴,

Pu-erh tea, named after a town in Yunnan, came to prominence⁵

普洱茶，以云南省一个小镇的名字命名

when it was drunk by emperors during the Tang Dynasty, 1,300 years ago.

自1300年前被唐代皇帝品过后美名远扬

Today it's a global export industry worth millions of pounds.

如今，普洱茶已是价值几百万英镑的全球出口产业

Unlike most teas which can lose their freshness soon after production,

不像大多数出产不久便失去新鲜的茶

pu-erh tea is fermented⁶, which improves the taste,

普洱茶是经过发酵的，这提升了普洱的口感

texture⁷ and aroma⁸.

The most sought-after pu-erh teas can take 30 years to mature
